Will Bowman: "BioGro certified fruit from Greystone's vineyards, where I actually worked my first vineyard job. A 16 year old block planted to clay dominant limestone soils in Omihi, North Canterbury. 239 and 110 clones.
A portion went to a stainless VC as whole-bunch with the balance being direct-pressed. Part of the pressed juice topped the whole-bunch, while the rest went to an old barrique. The VC ferment was basket pressed after 12 days, back into stainless. The barrique fermented on full solids through alcohol and malolactic. I brought the two together three weeks before bottling. Bottled by hand without any alterations.
The wine has a savoury reduction, with papaya and lime and beeswax. It's driven by a floaty, juicy acidity, that tightens and lingers with a pithy, citrusy anchor. Has a lovely evolution over a couple days once opened.
