Thompson Bros Organic Highland Gin
Not content with establishing one of the World’s leading whisky bars in Dornoch, brothers Phil and Simon Thompson have upped their ambitions and started making their own whisky and gin on-site at Dornoch Castle Hotel, forming Dornoch’s first whisky distillery.
Their Organic Highland gin has been distilled from a blend of 10% Organic Plumage Archer Barley, slowly fermented and gently twice distilled with 90% Organic Grain Neutral Spirit which was infused with their house botanical blend. The two different spirits were then combined and slowly diluted to 45.7% abv.

Juniper Berries, Angelica Root, Cardamom Seeds, Aniseed, Orange Peel, Lemon Peel, Coriander Seeds, Meadowsweet, Elderflower, Peppercorns Black, Freeze-dried Raspberry
