Vineyard: TOSQ Vineyard at the foot of Mt Pisa.
Soil: Loess over schist derived fine sandy loam with river gravels, schist and quartz
Viticulture: No pesticides, herbicides, systemic fungicides or inorganic fertilisers used
Harvest: Handpicked on 9th March 2018
Vinification: Natural yeast fermentation, kept on skins for 34 days. Aged in French oak barrels for 20 months. No commercial enzymes, bacteria or additives used except for < 20 mg/L sulphites before bottling
Bottling: Bottled on 29th November 2019 without fining or filtration. 3012 bottles produced
