Gold Medal, 2022 New Zealand Spirit Awards
ELSEWHEN: A world where Applejack takes its star turn.
It’s about time: Tree ripened fruit, new fashioned techniques, perfectly matured, future proof. Find another dimension: Caramel, candyfloss & spices. Sip or mix. Explore with friends.
2017 Harvest, Bottled 2021.
Tasting notes: The concentration of apples and intensity of charred new American oak create a synergy making it impossible to pick which one is adding the smooth vanilla, rich caramel, soft baking spices, deep nuttiness or candied sweetness. And together they leave a finish that will last until bedtime.
Process: We started this batch of New Zealand’s first Applejack in 2017 by making pure apple cider from 10,000 kgs of 100% Tasman Cox Orange Pippin and Fuji apples, fermented slowly over winter, then distilled in a German Copper Pot still. It has been carefully aged in charred new 100L American Oak barrels, then blended and rested in first use ex-Four Roses Bourbon casks before proofing and hand bottling.
How to Enjoy: This spirit brings a distinctive twist anytime you might drink a bourbon or rye whiskey. Commonly associated with the Jack Rose cocktail, it also excels as:
- Neat, and there’s no shame in opening the aroma with a splash of water
- Applejack Sazerac
- Mela d’Alba (Applejack Negroni)
- ELSEWHEN and Tonic – especially nice with the bright tang of East Imperial Yuzu
What is Applejack?
While technically, Applejack is an apple brandy, it is very similar to spirits like bourbon or rye whiskey aged in new American oak barrels, and you’ll notice a distinct smooth fruit complexity from cider brandy aged this way.
