Hops: Motueka, Pacific Jade

Story: Chew Chong of Canton, knew nothing of Saison. What he did know, however, was how to make a buck, specifically with fungus and milk. He initially made his fortune extracting fungus from decaying Taranaki native trees and exporting them back to China as a delicacy. Then, from his dairy factory in Eltham, he was the bright spark who created the famous pound of butter. We've brewed his Belgian style Saison "farmhouse ale" in his honour, using traditional Belgian "fungus" (otherwise known as yeast) while nodding to his Kiwi heritage with a hint of Kawakawa and Horopito.
Brewers Notes: Saison is traditionally untraditional, a kitchen sink beer that has no real style parameters; rather a beer brewed with whatever materials was on hand to farmers and brewers alike. Brewed to be a sessionable and refreshing ale, this Saison uses a particular belgian yeast to give soft clove and bubblegum notes. We’ve added a hint of Kawakawa and Horopito to give a spicy complexity and fermented the beer as dry as possible. This beer is refreshing and light, and goes amazingly with fish dishes, and sharp cheeses.
