The Billet Doux is a preservative free wine made with fruit from the Cairnmuir Vineyard. Each year a small parcel of Pinot Noir is identified as appropriate for producing this wine.Made in tiny quantities, it is hand bottled with a cork closure.
Pinot Noir on rootstock planted 1994, BioGro certified. This vineyard is farmed under BioGro’s strict organic regime which is also recognised in the European Union.
Hand-picked and destemmed to an open top fermenter. Light extraction techniques employed with a total of 18 days on skins. Matured in three-year-old French oak barrels and bottled in February 2018 right before the coming harvest.
Total Sulphur <10ppm and 14.0% Alcohol.
