Tasting note A fruity, fresh Pét Nat made from Pinot Noir (85%) and Syrah (15%) from Marlborough, New Zealand. The palate is bursting with red fruits (strawberry, raspberry, pomegranate, rhubarb) and the finish is long, dry and salivating.
This is a true pétillant naturel made by bottling the juice mid-fermentation without further additions, adjustments or alterations. Cloudy, but not too cloudy.
Vinification
The fruit for this wine was hand harvested, slowly-pressed and then fermented at cold temperatures in stainless steel tank together as one. The wine was bottled mid-ferment where it continued to ferment all the way until dry in bottle. The wine remains undisgorged, thus remainining lightly cloudy (as intended) on its fine yeast lees in bottle.
