A while back we racked a spontaneous beer out of a brandy barrel filled with a large amount of apricots and peaches. Rather than letting the spent fruit go to waste we brewed a lower gravity saison in order to showcase the more subtle character of second use fruit (and second use of the barrel). This beer was made with plenty of wheat for body and fermented out in primary with a saison yeast before being transferred into the brandy barrel on to the second use fruit.
