Vineyard: Pisa Terrace Vineyard at the foot of Mt. Pisa
Soil: Gravely, mineral adundant, well-drained soil with quartz and schist
Viticulture: No pesticides, herbicides, systemic fungicides or inorganic fertilisers used
Harvest: Hand picked on 9th - 11th April 2017, 19hl/ha
Vinification: Natural yeast fermentation, 17% whole bunch. No commercial enzymes, bacteria or additives used except for < 20 mg/L sulphites before bottling
Ageing: 19 months in French oak barrels. 13% new oak
Bottling: Bottled on 22nd November 2018 without fining or filtration. 4836 bottles produced
