Winemaking notes: Vintage 2021 was perfect and bountiful! We decided to do some very late season thinning out of some fruit in Monomeith and Scary Gully to open up the canopy and fruit-zone to minimize any botrytis pressure (it was a late and cool season). The fruit was picked in the cool morning before being direct pressed into 225L barriques for fermentation. The fermented wine was racked into tank and some late season juice was added in for the sugar component before the wine was bottled and laid to rest for a few months to finish its bottle fermentation and be released to the world.
