Alipús is an artisanal mezcal from Los Danzantes, a cooperative of food lovers and mezcal producers. San Miguel is made from 80% espadín and 20% arroqueno agaves grown on the rocky cliffs above 1,800m in the the Sola de Vega region of Oaxaca. Roasted in underground ovens, crushed with a tahona, fermented with natural yeasts and distilled in traditional clay pot stills at a family distillery in the Sola de Vega region of Oaxaca.
This a rare and collectable agave spirit.
